Move project documentation to Wiki

Currently project/architecture documentation is stored in the arc directory in the root of the project repo. For a better overview/readability move the documentation to Wiki.

Acceptance cirteria:

• the whole documentation is moved to Wiki
• the structure of the docu stayed the same (arc42)
